Ingredients

    3/4 lb broccoli
    1 1/2 c whole-wheat couscous
    3 tsp peanut oil, divided
    2 large red bell peppers, cut into 1/4-inch pieces, divided
    1 large onion, sliced
    4 garlic cloves, finely chopped
    1 lb boneless skinless chicken breasts, cut into 1-inch pieces
    2 T red wine vinegar, divided
    1/2 c fresh basil leaves, torn and divided
    3 T sliced almonds, toasted
