Ingredients

    1 Tblsp light brown sugar
    about 1 1/2 tsp freshly ground black pepper
    pinch cayenne
    about 1/4 cup olive oil
    1/2 cup roasted salted cashews
    1 1/2 to 2 lbs boneless, skinless chicken breast, cut into 2-inch pieces
    salt to taste
    1/4 cup chopped scallions
    about 1/2 cup finely chopped cilantro, leaves and stems
    3 garlic cloves, finely chopped
    about 1 Tbsp finely chopped fresh ginger (optional)
    2 Tbsp dark rum
    1 large (15-oz) mango (or 2 smaller mangoes), cut into 1/4-inch chunks
    1 to 1 1/2 tsp cider vinegar, to taste
    rice of choice, for serving
