Ingredients
- 3 - 4 large cucumbers
Dressing:
1/4 tsp salt
1/4 C Japanese rice vinegar
1/4 C sugar
1 Tb peeled, minced fresh ginger
1 1/2 lbs salmon
Marinade:
3 Tb medium-colored Miso
3 Tb mirin (sub. 3 Tb Sake 1 1/2 Tb sugar)
1 1/2 tsp toasted sesame oil
2 Tb minced scallion greens
1 Tb peeled, minced fresh ginger
Serve over butter, Boston or romaine lettuce
add 2 Tb fresh chopped dill
