Cashew Nut & Pea Curry

Ingredients

    0.5 tbsp roasted curry powder
    150g cashew nuts, soaked in cold water for 2 hours
    good pinch turmeric
    1 lemon grass stalk
    1 tbsp sunflower oil
    1 onions, halved and sliced
    2 garlic cloves, chopped
    0.5 cinnamon stick
    1 bay leaf
    pinch cayenne pepper
    0.25 tsp paprika
    200ml coconut milk light
    75g frozen peas
    Fresh coriander, to garnish

Description

In Sri Lanka, Cashew Nuts Are Sold Fresh, Still Tender And Creamy-soft. They Make A Fabulous Curry. Over Here, You Will Need To Soak, Then Simmer The Cashew Nuts To Get Them Back To Something Close To Their Original State. It’s Definitely Worth The Bother
