Bocconcini, Prosciutto And Strawberry Salad

Ingredients

    1 bunch of watercress (approx 2 cups chopped)
    5 tsp lemon juice
    2 tbsp olive oil + 1 tsp
    Zest of 2 1/2 lemons
    2 tbsp white wine vinegar
    1 cucumber cut into 1 cm thick by 10 cm long pieces
    Salt
    1 tbsp fresh ginger, freshly grated or minced
    1 tbsp lime juice
    4 bocconcini, cut in half
    1 bunch of parsley, julienned (approx 5 springs)
    4 strawberries, sliced thick
    8 thin slices of prosciutto (approx 4 oz)
