Ingredients
- 1 cup Couscous (dry),
1/2 cup Cucumber (with peel), sliced and quartered
1/2 cup Yellow Pepper, chopped
2 Green Onions, sliced
1/2 small red onion, sliced
1/2 red chili pepper, deseeded and sliced thin
1/2 cup Pomegranate Seeds
1/2 cup Mango, chopped
1/4 cup Basil, chopped
1/4 cup Parsley, chopped
2 T Olive Oil
Balsamic Vinegar, to taste
Salt and Pepper
Serve chilled, or at room temperature.
Makes 4 generous servings.
