    1 center cut pork loin, fat and silver skin removed
    4 oz. ground pork
    1 egg yolk
    2 T. Panko breadcrumbs
    12 dried apple slices
    ¼ C. dried cranberries
    2 oz. stemmed arugula
    1 T. orange zest
    1 T. chopped sage
    1 T. granulated garlic
    1 t. ground fennel seed
    ¼ t. cayenne pepper
    ¼ t. black pepper
    2 T. salt

    Golden beet puree
    1 medium golden beet
    1 T. Dijon mustard

    Caramelized balsamic onions
    2 onions, Frenched
    1 t. olive oil
    ¼ C. port wine
    ¼ C. balsamic vinegar

    Bacon braised root vegetables
    2 rashers bacon, chopped
    1 t. garlic, minced
    1 carrot, peeled & diced
    1 sweet potato, peeled & diced
    1 parsnip, peeled & diced
    ½ rutabaga, peeled & diced
    ½ C. pork broth
    ½ t. chopped thyme
    ¼ t. chopped rosemary

    Grilled asparagus
    12 asparagus stalks, peeled

    Potato croquette
    12 oz. steamed, mashed potato
    4 oz. boursin cheese
    2 T. heavy cream
    1 oz. butter
    Flour, egg and crumbled Ritz crackers, for breading
    Peanut oil, for frying

    Oyster mushroom sauce
    4 oz. cleaned, chopped oyster mushrooms
    ¼ t. black pepper
    1 shallot, minced
    2 C. pork broth
    2 T. cognac
    1 T. butter
