Quinoa Salad W/ Apples, Walnuts, Cranberries

Ingredients

    1 cup quinoa, rinsed
    1 ½ cups vegetable broth
    T olive oil
    1 red onion, sliced
    3 T balsamic vinegar
    3 celery stalks, finely chopped.
    1 Fuji apple diced
    1 cup of walnuts, chopped
    1 cup dried craisins
    2 T olive oil
    1 tsp mineral sea salt

    Onion should be chopped. Could use a little less salt. Original recipe also called for 1 c diced fennel and 4oz chopped arugula, with a 3T balsamic vinegar, 2T olive oil, 2t mustard and 1/2 t pepper dressing. Optional: add 4oz diced aged Gouda and/or 3oz crumbled goat cheese.
