Whole Wheat Lasagna

Ingredients

    2 Cups Part skim ricotta cheese or cottage cheese or mixture
    1 egg or substitute
    1 teaspoon dried oregano
    1 teaspoon salt, as desired
    1 48-ounce jar of spaghetti sauce
    2 cups water
    20 lasagna noodles
    1 to 1.5 cups mozzerella cheese, shredded

    OPTIONAL:
    1 10-ounce package of frozen chopped spinach, thawed and drained
    4 cups of diced vegetables (onion, mushrooms, carrots, zucchini, summer squash, etc) steamed or sauteed in a little oil
    1 pound extra-lean hamburger or ground turkey, browned and drained
    1 pound tofu, crumbled
