Vegetarian Lasgana

Ingredients

    For sauce:
    1 cup diced onion
    4 tsp chopped garlic
    1 can Diced tomatoes w/no added salt
    2 fresh medium tomatoes
    2 tsp honey
    1/4 cup water
    1 tsp. Red Wine Vinegar
    Red Pepper Flakes (to taste)
    Salt (to taste)

    1 block medium to firm tofu (drained)
    2 eggs
    2 tbsp milk
    nutmeg
    salt (to taste)
    Black pepper

    4 cups fresh baby spinach (cleaned)
    1 1/2 cups chopped mushrooms

    3 slices reduced fat Provolone cheese
    1/2 cup Parmesan cheese (divided)
    1 oz. fat free Feta cheese

    6 sheets lasagna noodles
