Ingredients
- Mini Kangaroo Roast, (550g) (marinated or not)
3 rashers bacon, trimmed of most of the fat and rind
1 cup dry red wine (Lambrusca, Shiraz)
1 cup low sodium beef stock or water
Black pepper to taste
1 tsp ground rosemary
2 cloves
1tsp cinnamon
1 tsp ground ginger
1med carrot, Cut in half, then into 1/4"slices
1 med onion, cut in slices
1 stick celery, in 1/4" slices
150g butternut pumpkin, skin on, cut in 1" cubes
150g sweet potato, skin on, cut in 1" cubes
150g sliced large mushrooms or halved button mushrooms
8 brussel sprouts, fresh are best but frozen are ok
1 slice wholemeal bread processed into breadcrumbs
2 tsp cornflour
2 tsp white vinegar
pinch sugar( optional)
Description
The Difference Between 1 And 2 Is That I Have Changed The Vegetables Added To The Meat. Cauliflower, Or Broccoli Florets Could Be Added Also. Beef Could Be Substituted For The Kangaroo, Or Venison Or Rabbit.
