Spring Garden Stir Fry

Ingredients

    1 tbsp canola oil
    1 pound beef sirloin, sliced into thin strips,
    patted dry
    3 cloves garlic, minced
    1 bunch green onions, white part cut to
    4-inch lengths, remaining green parts
    sliced for garnish
    1 lemon, zested into large strips and
    juiced
    2 tbsp rice-wine vinegar
    2 tbsp recaito (cilantro cooking base)
    1 bunch thin asparagus, sliced at an angle
    into 3- to 4-inch pieces (about 3 cups)
    1 tsp cornstarch or arrowroot (optional)
    2 cups roughly chopped escarole
    2 tbsp roughly chopped cilantro leaves
