Ingredients

    12 dried lasagna noodles
    1/3 cup butter
    1/3 cup all-purpose flour
    4 cups fat-free milk
    1/2 tsp. salt
    1/2 tsp. ground black pepper
    1/4 cup finely shredded Parmesan cheese (1 oz.)
    1/4 cup shredded Swiss cheese (1 oz.)
    2 Tbsp. dry sherry
    1-1/2 cups finely shredded Pecorino Romano cheese (6 oz.)
    1 cup shredded mozzarella cheese (4 oz.)
    1 cup shredded Provolone cheese (4 oz.)
    1/2 cup shredded cheddar cheese (2 oz.)
    3 large roma tomatoes, peeled, seeded, chopped, and drained
    1 4-oz. jar (drained weight) sliced mushrooms, drained
    8 oz. smoked salmon, flaked, with skin and bones removed
