    Zest from 1 large lemon
    2 tbsp finely chopped fresh parsley, divided
    Sea salt to taste
    Freshly ground pepper to taste
    1 (14.5 oz.) can Hunts Diced Fire Roasted 100% natural tomatoes
    1/4 cup shredded parmesan cheese
