484g fresh Rainbow trout
2 tomatoes, chopped
1/4 onion, chopped
1/4 cup mango, chopped
1 clove garlic, minced
1/2 tsp (or 1 leaf) fresh basil
pepper to taste (enough salt in this, I wouldn't add any more!)
Splash (1/4 tbsp) of balsamic vinegar
