Pork Noodle Salad With Sesame-chili Dressing

Ingredients

    Sesame-Chili Dressing:

    1/3 cup sunflower oil
    3 tbsp lime juice (one large lime)
    2 tbsp honey
    1 tbsp rice vinegar
    1 tbsp grated fresh ginger
    1-2 cloves minced garlic
    1 tbsp Tamari soy sauce
    2 tsp sesame oil (or sunflower/olive oil)
    1/2 tsp crushed red chili flakes


    1 lb. pork tenderloin, cut into 1/4 inch medallions
    4 oz. wheat or rice vermicelli noodles (or other small noodles)
    1 cup chopped bok choy
    1/2 cup shredded napa cabbage
    1 medium carrot, grated
    1 cup bean sprouts
    1/2 cup thinly sliced radishes
    4 inch piece of English cucumber, halved and sliced
    1 bunch green onions, chopped
    1/4 cup cilantro leaves, lightly chopped
    1/4 cup toasted nuts (cashews, peanuts, etc.)
    1 tbsp sesame seeds
