    1 med onion, chopped
    1 slice bacon
    2 Tbsp olive oil
    2 Tbsp whole wheat flour
    1 cup water
    1 chicken bouillon cube
    1 - 12 oz can fat free evaporated milk
    1 - 6.5 oz can mushrooms, sliced or pieces
    1 cup spinach or spring greens salad mix, cut thinly
    Salt/Pepper/Tony Cachere's seasoning
    3 Tbsp shredded parmesan (or parmesan/romano/asiago or cheddar)
    6 Tbsp fat free croutons
