    2 Cups Israeli Couscous
    3 Cups Chicken Broth
    3 Tbsp Extra Virgin Olive Oil
    1 Tbsp Red Wine Vinegar
    1.5 Tbsp Whole Grain Dijon Mustard
    8.5 oz can Artichoke Hearts, quartered
    15 oz can Red Kidney Beans, drained and rinsed
    1 bunch Scallions, chopped
    10 spears asparagus, blanched and chopped
    4 Plum Tomatoes, chopped
    Salt and Pepper, to taste
