Ingredients
- 1 cup quinoa, cooked
1 drained and rinsed can of corn
3/4 c. diced red onion
2 oz. roasted red peppers, diced
1/2 c. diced celery (inner, tender stalks)
5 radished sliced
2 c. shelled edamame
1/2 c. chopped, fresh cilantro
Dressing:
4 Tbsp lime juice
1 garlic clove, minced (more if you like it!)
2 Tbsp. olive oil
salt or Mrs. Dash to taste
NOTE:
Can top with crumbled feta and/or minced jalapenos for some additional flavor
