Southwest Bean And Rice Salad

Ingredients

    2 cups cooked brown rice
    1-15 oz can of black beans or pinto beans, drained and rinsed
    1 cup corn kernals
    1 cup chopped red bell pepper
    1 can Rotel tomatoes, choice of variety
    1/2 jalepeno, chopped (optional)
    1/2 cup chopped cilantro
    juice of 1 lime, about 2 TB
    2 TB olive oil
    1/4 cup white or red wine vinegar
    1 tsp cumin
    1 TB chili powder

Description

Delicious As A Side Dish Or Make It A Meal. Southwestern Flavors Of Lime, Cilantro, And Chilies. Delicious!
