Moroccan Chickpea Salad

Ingredients

    1 15-oz can chickpeas
    1 cucumber, diced
    1 yellow or red bell pepper, diced
    1 10-oz container cherry tomatoes, halved
    1/4 c. red onion, diced
    2 T capers (if desired)
    2 T fresh cilantro, chopped
    1 3/4 t cumin
    Dressing:
    1/4 c shallots, diced
    1/3 c lemon juice, freshly squeezed
    1/3 c extra virgin olive oil
    salt
    black pepper
