Makeover: Breakfast (by Rittaj)

Ingredients

    cooking oil spray, preferably olive oil
    2 cups plain oatmeal (quick oats, not instant)
    1 cup whole wheat pastry flour or white whole wheat flour
    1 cup vanilla whey protein powder (3½ scoops)
    1 cup Splenda granulated or sugar
    1/2 teaspoon salt
    1 1/2 teaspoons baking soda
    1 tablespoon baking powder
    1 tablespoon ground cinnamon
    1/2 teaspoon ground cloves
    1/4 cup milled flaxseed
    3 eggs
    3/4 cup nonfat or low-fat plain Greek yogurt
    1 tablespoon canola oil, preferably organic, or macadamia nut oil
    2 tablespoons water
    1/2 cup walnuts
    1/2 cup dried cherries


    Instructions:
    1. Preheat oven to 375°F. Coat nonstick baking sheet with cooking spray.
    2. In large mixing bowl, combine oats, flour, whey protein, Splenda, salt, baking soda, baking powder, cinnamon, cloves, and flaxseed; stir to blend. Add egg whites, yogurt, oil, and water; stir to blend.
    3. Drop batter onto baking sheet in 8 equal mounds. Bake 8 minutes; promptly remove from oven while still very soft. Allow cookies to cool on baking sheet for 10 minutes; wrap in plastic and store in refrigerator or freezer. (To reheat frozen cookies: unwrap and microwave 30 to 45 seconds.)

    Jim made on 9-27-11 and would use plain yogurt next time and less sugar. He only had Activia Vanilla on hand.

Description

Jim Found On IPAD Cookbook. He Added Walnuts, Dried Cherries And Used Activa Vanilla And Didn't Have Flax Seed. They Are Great. BUT He Made Lots Of Them Not 8 They Would Have Been Huge. He Probably Made 24, Which Would Change The Calories To Even Less
