Ingredients

    2 tablespoons whole grain mustard
    2 tablespoons finely chopped shallots
    2 tablespoons red wine vinegar
    6 tablespoons canola oil
    Pinch of brown sugar (or a bit of honey)
    Pinch of salt and pepper
    3 cups water
    1 1/2 cups quick-cooking barley
    3 cups green cabbage, thinly sliced
    4 green onions, sliced
    2 carrots, shredded
    12 to 16 ounces ham, julienned (about 2 1/2 cups)
