Apple-cinnamon Bran Muffins

Ingredients

    1 1/4 cup all purpose flour
    1 cup oat bran
    1 cup unsweetened applesauce
    1 teaspoon vinegar (optional, but makes muffins fluffier)
    3/4 cup non-dairy milk of choice (I use soy)
    1 tablespoon canola oil
    1/2 cup brown sugar, packed
    1 tablespoon baking powder
    1/2 teaspoon baking soda
    1 1/2 teaspoons cinnamon
    1 teaspoon nutmeg
    1/2 teaspoon salt

    1 apple (optional)
    1 teaspoon vegan butter (optional)

Description

Great For A Breakfast On The Go Or A Pre-workout Snack. Decrease The Brown Sugar To 1/4 Cup If You Like Less Sweet Muffins. If You Don't Want To Use The Cooked Apple, Try Adding Your Favorite Dried Fruit Or Nuts To The Batter Instead.
