Asparagus Mushroom Brown Rice (kind Of Risotto)

Ingredients

    1 tbsp. Smart Balance Light
    1 cup Brown Basmati Rice
    4 cloves garlic, finely minced
    1 tbsp. olive oil
    1/4 cup chopped sweet onion
    1/4 cup chopped red bell pepper
    6 medium "baby bella" mushrooms (porcini), sliced
    10-12 spears of asparagus, cut into 1" pieces
    1/4 tsp. kosher salt
    1/4 tsp. fresh cracked black pepper
    1/2 tbsp. fresh chopped rosemary
    1/2 tbsp. fresh chopped basil
    2 tbsp. shredded Parmesan cheese

Description

This Can Be Made With Low Sodium Chicken Broth Or Water. If Using Water, You Can Add A Bouillion Cube Or Two, But It Will Change The Sodium Amounts.
