    -8 oz. Pad Thai Brown Rice Noodles
    1/4 cup Agave Nectar
    1/4 cup Mirin
    3 tbs Ketchup*
    3 tbs Tamari or Soy/Shoyu
    1-1/2 tbs Lime Juice
    1 tbs Sriracha
    2 tbs Coconut Oil (any flavorless oil works, we like Safflower for this)
    14-16 oz. Chicken Breast
    1/2 Red Onion, sliced
    2 Cloves Garlic, minced
    3 Scallions, halved lengthwise and cut into 2 inch pieces
    2 cups Bean Sprouts these for shiitake mushrooms)
    1 Carrot, shredded
