Chicken Thigh Stir-fry

Ingredients

    For Stir Fry:

    3/4 lb. of boneless, skinless chicken thighs
    1 lg. green bell pepper
    1 small napa cabbage
    1 1/2" piece of ginger root, grated
    1-2 cloves garlic, minced
    2-4 scallions
    1 tbsp light Olive Oil (not EVOO)
    1 tbsp sesame oil

    For Sauce:
    2 tbsp Soy Sauce
    1 tbsp Oyster sauce
    2 tsp corn starch
    1/4 c. rice wine
    1 tbsp agave nectar
    red pepper flakes to taste
    Salt and pepper to taste

    Rice:

    3/4 c. dry Brown Rice
