Mexican Bean And Rice Bake

Ingredients

    2 cups brown rice, cooked
    2 egg whites
    1 1/2 cups picante sauce
    1 cup shredded cheddar cheese
    1 tsp chili powder
    1 can pinto beans, rinsed and drained

    heat oven to 350. Spray square baking dish, 8x8x2 inches, with Pam. Mix rice, egg whites, 1/2 cup of picante sauce, 1/2 cup of the cheese, and the chili powder. Press in bottom of baking dish.

    Mix beans and remaining 1 cup sauce; spoon over rice mixture. Sprinkle with remaining cheese. Bake uncovered 30 to 35 minutes. Let stand 5 minutes before serving.
