Mex-terranean Tuna Salad

Ingredients

    1 can tuna, packed in water
    1 can chick peas (drained and rinsed)
    4 hard-boiled eggs
    1 jalapeno pepper
    3 sprigs Italian parsley, chopped
    1 avocado (peeled, seeded) roughly chopped
    5 sprigs fresh baby dill
    1 large carrot - julienned
    .5 cucumber - julienned
    1 bunch radishes, diced
    12 grape or cherry tomatoes (whole)
    1 cup apple cider vinegar
    Freshly ground pepper and salt to taste

A Work In Progress, But A Mishmash Of Fresh Veggies, Chickpeas, Jalapenos And Herbs That Stretches One Can Of Tuna A Long Way. A Favorite Served With A Bit Of Spicy Horseradish Mustard!
