Apple Muffins

Ingredients

    1/2 c oat bran
    1 c whole-wheat flour
    1/4 c ground flaxseed
    1 tsp baking soda
    1 1/2 tsp baking powder
    1 tsp ground cinnamon
    1 tsp nutmeg or pumpkin spice
    1 egg, beaten
    4 Tbsp canola oil
    1/3 c applesauce
    1 shredded apple
    1/4 c sugar (I used splenda)
    1/4 c chopped pecans

    Sprinkle with oatmeal on top (optional)

Description

This Is A Very Dense Muffin, Not A Big Riser, But Moist On The Inside. It's Healthy And Low In Carbs, Very Low In Sugar And High In Protein And Fiber. This Recipe Came From Womans Health Magazine.
