2 cups pastry flour (white or wholewheat, or a mixture)
1/4 cup soy or chickpea flour - 1/4 cup ground walnuts
3/4 tsp salt
3/4 tsp cinnamon
1/2 tsp baking soda
1/2 tsp. baking powder
1/2 tsp ground allspice
1/2 tsp freshly-ground nutmeg
Glaze and Topping
1 cup organic powdered (icing) sugar - 1 cup "my powdered sugar"
1/4 cup real maple syrup (Grade B is good) - 1/4 cup agava
1 cup chopped roasted nuts of choice (walnuts, pecans or hazelnuts/filberts are excellent choices) - no roast 1 cup ground pecans
