Shirley Plant's Parsnip Soup

Ingredients

    3 Tbsp Olive oil
    2.5 cups of parsnips, peeled and diced
    1/2 of a large butternut squash, peeled and diced
    1 small onion, diced
    2 medium potatoes, peeled and diced
    1 medium sweet potato, peeled and diced
    6 green onions, sliced
    3 stalks celery, diced
    2 cloves garlic, minced
    1 tsp ground sage
    2 tsp sea salt
    1/2 tsp fresh ground pepper
    6 cups water
