Kimberley's Scrumptious All-in-one Salad

Ingredients

    large head of Red Leaf or Romaine Lettuce, washed, spun dry and torn in bite size pieces

    1/4 cup of roasted Pepitas (pumpkin seeds)
    1/4 cup dried currants
    2 Tbs gorgonzola or blue cheese crumbles
    1 Tbs real bacon bits
    4 Tbs croutons

    Dressing:
    1 Tbs olive oil
    1 tsp balsamic vinegar
    salt and pepper to taste
