Potato, Leek, Parsnip, Turnip Soup

Ingredients

    1 onion, small, chopped
    1 c, parsnips, peeled, chopped
    2 c, turnips, peeled, chopped
    2 c, potatoes, peeled, chopped
    1 stalk, leek, chopped, cleaned
    4 strips, bacon, cooked, chopped
    4 c, chicken broth
    1 c, whole milk
    salt and pepper to taste
    Add 0.5 to 1c water if wanting thinner consistency

    Cook bacon and onion first. When onion is transparent, add rest of the ingredients except milk. Cook for 20 minutes until vegetables are tender. Using emersion blender, blend until smooth. Add milk, water (if needed). Add salt & pepper to taste.
