1/4 medium onion, chopped
1 or 2 bay leaves
1/2 cup grated Gruyere cheese (can use Swiss, but Gruyere is more flavorful)
fresh ground pepper to taste
1/2 cup panko bread crumbs
2 Tbs grated parmesan cheese
1 Tbs olive oil
