Christian's Jambalaya

Ingredients

    2 frozen chicken breasts (thawed)
    5 links of italian sausage (skinned and cut into pieces)
    1 lb of frozen cooked shrimp (medium-thawed)
    1 red onion (medium)
    1 summer squash (cut into pieces)
    1 zucchini (cut into pieces)
    1 green bell pepper (cut into pieces)
    4 stalks of celery
    2 c mushrooms (sliced)
    3 cloves of garlic (pressed or minced)
    1 can of diced tomatoes with chiles (Rotel)
    1 can of diced tomatoes with chiles - hot (Rotel)
    5 cups of chicken broth or bullion
    5 cups of instant white or brown rice
    1/4 tsp cumin
    1/4 tsp allspice
    1 tsp thyme
    4 bay leaves
    1 tsp cajun or creole seasoning
    1/4 tsp of cayenne pepper (optional - for extra kick)
    salt & pepper to taste
    1 tsp Extra Virgin Olive Oil (or subst. cooking spray)

A Delicious Jambalaya Recipe With A Kick - Can Be *litened* Up By Using Turkey Sausage Or Leaving It Out Altogether. Also, Brown Rice Can Be Substitute And Low Sodium Broth Or Bullion. It Includes A Bunch Of Veggies. This Recipe Feeds A Crowd.
