Butternut Squash Bread Or Muffins

Ingredients

    1 butternut squash (about 8-10 inches long)
    2 cup wheat flour
    2 cup ground oat (oatmeal)
    2 tsp baking soda
    1/2 tsp salt
    2 tsp ground cinnamon
    2 tsp nutmeg
    1 tsp masala (optional)
    1 tsp ground ginger (optional)
    1 tsp coriander (optional)
    3/4 cup egg substitute
    1 c splenda
    1/4 c vegetable oil
    1/2 cup applesauce
    1 c lowfat (1.5 %) buttermilk
    2 tsp vanilla extract
    1/2 cup low calorie pancake syrup (~30 cal per 1/4 cup)
