Grilled Tofu, Crimini & Onion Pita Sandwiches

Ingredients

    For the Marinade:
    1/2 cup worcestershire sauce
    4 cloves garlic, roughly chopped
    1 tbsp Chipotle Tabasco
    4 sprigs fresh thyme
    3 sprigs fresh oregano

    12 crimini mushrooms, wiped clean
    1 block extra firm tofu, drained & cut into 1 1/2 inch pieces
    1 yellow onion, peeled & cut into 1/2 inch thick rings
    canola oil
    kosher salt and freshly cracked black pepper
    bamboo skewers, soaked in water for at least 1 hour

    For Vinaigrette:
    juice and zest from 1 lemon
    2 tbsp crumbled feta
    1 garlic clove, minced & ground into a paste w/ salt
    1/2 tsp dried oregano
    1 tbsp dijon mustard
    1/8 cup olive oil
    kosher salt and freshly cracked black pepper
