Manhattan Clam Chowder

Ingredients

    Farmland lower sodium bacon 3 strips, and 1 1/2 tbsp of fat. (The recipe called for 2 strips and 2 tbsp. of fat from it)
    Garlic, 2.5 tsp minced.
    Bay Leaf, 1.5 leaves, whole
    Onions, raw, 1 cup, chopped
    Celery, raw, .5 cup, diced
    Green Peppers (bell peppers), .25 cup, strips
    Carrots, raw, .4 cup, chopped
    *Hot red Chili Peppers, 1 pepper
    Oregano, ground, .75 tsp
    *Potato, raw, 1.5 cup peeled, diced
    College Inn low sodium chicken broth, 2 cup, I used to make up for the broth from freshly cooked clams since I used frozen, cooked
    Canned Tomatoes, 1.5 cup , peeled, seeded and chopped with the juices.
    Thyme, fresh, 1.5 sprigs.
    Pepper, black, 1 tsp fresh ground, to taste.
    Parsley, .25 cup divided in 2 reserve the half for garnish. ( I love parsley - the recipe called only for 2 tbsp)
    Northern Chef clam meat, 9 oz
