- Empananda Dough
(makes 10 empanadas)
2 cups Masa Harina flour
1/2 cup spelt flour
1/4 chia seed flour
1 1/2 tsp sea salt
3 tbs organic shortening
1 tbs cider vinegar
2 egg yolks (save whites to brush dough before baking)
1 3/4-2 cups water (start with half as directed and add the full amount only if you need to)
Turkey and Squash Filling
1 tbs olive oil
1 pound lean ground turkey breast
1 shallot, minced
3 cloves of garlic, minced
1 yellow summer squash, diced
1 zucchini, diced
1 cup of your favorite salsa
1 tsp paprika
1 tsp mustard powder
1 tsp stone ground mustard
2 tsp Bragg's Liquid Aminos (or soy sauce or Worcestershire sauce)
Salt and pepper to taste
