Pat Neely's Beef And Pork Chili

Ingredients

    8 slices applewood smoked bacon, cut into 1/2 inch pieces
    4 cloves garlic, finely chopped
    2 medium onions, finely chopped
    1 red bell pepper, chopped
    1 yellow bell pepper, chopped
    3 T chili powder
    1 T cumin
    1 T chipotle chili powder
    2 tsp. dried oregano
    1 T smoked sweet paprika
    1 tsp. sea salt
    1 tsp. freshly ground black pepper
    1 lb. extra lean ground beef (90% lean or better)
    1 lb. ground pork
    1 cup Light Corona Beer
    1 14.5 oz. can black beans, drained and rinsed
    1 14.5 oz. can red kidney beans, drained and rinsed
    1 28 oz. can crushed tomatoes
    2 14.5 oz. cans petite cut diced tomatoes, with juice
    Garnishes as desired: sliced scallions, shredded cheese, sour cream, avocado, etc.
