2 tbsp. dry sherry or chicken broth
2 tsp. sesame oil
4 tsp. cornstarch
1 tsp. cider vinegar
1 lb. pork tenderloin, cut into ½ inch wide strips
Stir-fry:
2 tbsp. vegetable oil
2 tsp. grated gingerroot
1 tsp. finely grated orange rind
2 cloves, garlic, minced
3/4 tsp. hot pepper flakes (or less)
1 medium onion, diced
1/2 c. baby carrots, cut into slivers
1 sweet red or yellow pepper, cut into strips
3 c. snow or sugar snap peas, trimmed and cut in ½ diagonally
3/4 c. whole cashews
1/4 c. sodium reduced chicken broth
1/4 tsp. salt (optional)
