Multi Grain Tabouli

Ingredients

    Salad:
    2 cup cooked Basmati rice, barley, couscous, bulgar, quinoa or a combination to make the 1 cup
    1/2 cup dried apricots, chopped
    1/2 cup raisins
    1/2 cup drained chickpeas
    1 cup green peppers, chopped
    1 cup red peppers, chopped
    1/2 cup English cucumber, chopped
    4 green onion, chopped
    1/2 cup fresh parsley or celantro
    1/4 cup mint
    3 oz feta cheese

    Dressing:
    1/3 cup orange juice (I like to use half concentrate and half water for stronger flavor)
    3 tbsp red wine vinegar
    1 tbsp extra virgin olive oil
    2 cloves garlic
    1 tbsp honey
    1/2 tsp pepper
