Ingredients

    *Trader Joe's Israeli Couscous, 1/3 Cup Dry, 3 serving (remove)
    *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" (remove)
    Eggplant, fresh, .5 eggplant, unpeeled (approx 1-1/4 lb (remove)
    Onions, raw, .5 medium (2-1/2" dia) (remove)
    *Extra Virgin Olive Oil, 2 tbsp (remove)
    *Balsamic Vinegar, 1 tbsp (remove)
    Garlic, 2 clove (remove)
    Chicken Breast, no skin, 1 breast, bone and skin removed (remove)
    Cranberries, dried, sweetened (craisins), 0.33 cup (remove)
    *Diamond Sliced Almond, 0.25 cup (remove)
    Sweet potato, cooked, baked in skin, without salt, 1 small (remove)

Description

Marinate Chicken In 1 Tbls. Of Oil And Seasonings. Grill Chicken And Vegetables. Let Cool. Then Chop Into Bite Size Pieces. Cook Couscous Per Directions. Let Cool. Combine Everything And Refrigerate For At Least An Hour, Then Serve.
