Beet & Sweet Potato Cabbage Veggie Soup

Ingredients

    4 small beets, shredded like hash browns
    1 small sweet potato (thin, 5 inches), shredded like hash browns
    3 tbs extra light virgin olive oil
    1 large onion, diced
    1 large bell pepper, any color, diced
    1 small head cabbage, shredded
    2 cups broccoli, cut up bite sized chunks
    2 cups cauliflower, cut up bite sized chunks
    1 large yellow summer squash zucchini, thick slices cut in quarters
    2 large celery stalks, sliced
    2 medium carrots, shredded
    1 Large 29 oz can Diced Tomatos, (including juice)
    1 sm can green beans, (small can, like 14 1/2 oz)
    1 sm can garbanzo chickpeas, (small can like 15 oz)
    1 sm can black beans, (small can like 15 oz)
    8 bouillon cubes or packets or broth that makes up about 8 cups, (chicken, beef or vegetable broth)
    1 tbs onion powder
    1 tsp garlic powder
    cajun or blackening seasoning, pepper or red pizza chili pepper to taste (be careful not to get too hot)
    1 tsp Italian seasoning
