Ingredients
- 2 cups grated raw carrots
2 Tbsp lemon juice
1/2 cup crushed pineapple (well drained)
Mix these three things together and set aside.
1 1/2 cups all-purpose flour
3/4 cups sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp allspice
Mix all dry ingredients together
3/4 cup vegtable oil
3 eggs
Add oil to the dry ingredients and beat until well blended, then add the eggs, one at a time, beating well after each addition.
1 cup raisins
Add raisins and carrot mixture, and beat until thoroughly combined. Divide the batter evenly between two loaf pans and bake for about 40 minutes, or until a broomstraw inserted in the center of a cake comes out clean. Remove from the oven and turn each cake out onto a rake to cool.
Can be frosted with a honey butter...very nice
