Moroccan Veggie Tangine

Ingredients

    1 1/2 c chicken or vegetable broth
    Chickpeas (garbanzo beans), 2 cup (remove)
    Tomato Paste, 1 can (6 oz) (remove)
    Red Ripe Tomatoes, 1 cup, chopped or sliced (remove)
    Eggplant, fresh, 2 cup, cubes (remove)
    Zucchini, 2 cup, sliced (remove)
    Carrots, raw, 1 cup, chopped (remove)
    Butternut Squash, 1 cup, cubes (remove)
    1 c Onions, raw,
    1 tbs Garlic,
    1 tsp Olive Oil
    1 tbs Basil
    1/8 tsp Paprika
    1/8 tsp Ginger
    1 c diced dried apricots
    1/2 tsp Cinnamon
    t tsp sweetner (sugar or splenda)
