Work In Progress Stuffed Acorn Squash

Ingredients

    1 Acorn Squash, cut in half and seeded
    2 TBS Better or butter
    1/2 cup celery, chopped
    1/2 cup shallots, chopped (If subbing onions I'd use 1/4 cup
    1/4 cup raisins
    1 cup chopped apples (I used 2 small) chopped, unpeeled
    1 cup beef stock
    2 tsp sweet white miso
    1 cup cooked brown rice
    1/4 cup plus 2 TBS toasted walnutschopped, not minced

    1 TBS ground, golden flax seed
    Salt & Pepper
    Grated nutmeg (optional) to taste
