Meatloaf Sandwiches

Ingredients

    1 tablespoon vegetable oil
    1 medium onion, diced small
    2 tablespoons tomato paste
    1 ½ pounds ground beef chuck (10% fat)
    1 cup roughly crushed saltine crackers (about 15 crackers)
    1 cup coarsely grated sharp cheddar (3 ounces)
    3 large eggs
    1 tablespoon + 2 teaspoons prepared horseradish
    1 tablespoon Worcestershire sauce
    ½ teaspoon coarse salt
    ¼ teaspoon ground pepper

    Toasted country style bread, lettuce, sliced dill pickles, and ketchup for serving
