    4 large button mushrooms, roughly chopped
    2 tbsp olive oil
    16 oz jar of marinated artichoke hearts, drained and chopped
    8 sun-dried tomatoes
    1/4 cup vegetable stock
    1-1/2 roma tomatoes, roughly chopped
    dried basil and parsley
